We work with Heritage Foods USA, the farm-to-table online butcher based in Brooklyn, dedicated to supporting family farmers raising livestock on pasture with old-school genetics. Why? Because we believe good, clean, humanely sourced meat is the key to a great meatball. And because we use ground meat, we can use the extra trim that normally gets wasted in the butchery process, creating much less waste and great tasting balls! We're truly a nose to tail operation and doing all we can to make a positive impact on our earth.

Murray's Chicken

Murray’s Chickens are raised in the rolling hills of Southeastern Pennsylvania. The birds are processed just over the New York state line in the Catskill Mountain region of Sullivan County. By partnering with a select number of family farms Murray’s helps to strengthen local economies and protects small farmers by allowing them to focus solely on the exceptional quality and taste of the Murray’s Chickens they grow. Wild Hive Farm

Wild Hive Farm was founded to promote sustainable agriculture in our region by promoting grain-based local agriculture. This mission is born out of  the local food movement and Wild Hive is committed to the production of locally grown and milled high quality flour. Wild Hive operates a flour mill using traditional stone grinding equipment. We use their corn meal in our polenta which is milled in small batches from organic corn purchased from local and regional farmers.

Brey’s Egg Farm is located in Bethel, NY of Sullivan County, a mere 100 miles from New York City. We are a fourth generation family run farm that produces the most delicious eggs for our fried eggs!

Satur Farms

Satur Farms owned and operated by Paulette Satur and Eberhard Müller is dedicated to growing the finest vegetables and culinary ingredients. It began when they purchased their original farm on the North Fork of Long Island in 1997, with the intention of growing some vegetables and herbs for Chef Müller's restaurant. Colleagues in New York City asked if they might be able to buy their produce, and the farm as a business became a reality. Satur Farms is a certified MWBE, Minority and Woman-owned Business Enterprise.
